Servings: You get a gallon with this recipe

Duration of preparation: 20 Minutes

Lasts: Four weeks

Ingredients:

  • 5 lbs cabbage (shredded)
  • 2 Tbsp. sea salt (can be picking salt too)
  •  1 Tbsp. caraway seeds

How-To:

  1. Mix the cabbage with the caraway seeds and some salt; Let it marinade for ten minutes.
  2. Put this mixture in a container, and put an onion on top to weigh it all down. Use a rubber band and a paper towel to put the mixture in place.
  3. Open the container every other day for about two weeks to make sure you remove any excess dirt that may come up at the top. Make sure to put in a place where there’s no sunlight, and the cabbage should be sunken in in liquid completely.
  4. You can use this mixture for an entire half a year! But before consuming make sure it sits for a month, so all of the ingredients can marinade themselves with the liquid, and become usable.

Sauerkraut is packing with probiotics, which are very beneficial for your health. Treat issues like IBS and diarrhea using this mix. Some other foods to use that are packing with the good bacteria are pickles, lassi, yogurt, kombucha, tempeh, etc.
